Combining cellulose nanofibrils and galactoglucomannans for enhanced stabilization of future food emulsions

چکیده
Abstract The use of wood-derived cellulose nanofibrils (CNFs) or galactoglucomannans (GGM) for emulsion stabilization may be a way to obtain new environmentally friendly emulsifiers. Both have previously been shown act as emulsifiers, offering physical, and in the case GGM, oxidative stability emulsions. Oil-in-water emulsions were prepared using highly charged (1352 ± 5 µmol/g) CNFs by TEMPO-mediated oxidation, coarser commercial CNF, less (? 70 quality (Exilva forte), physical was evaluated droplet size distributions, micrographs visual appearance. charged, finely fibrillated stabilized more effectively than coarser, lower CNFs, probably due higher electrostatic repulsions between fibrils, surface coverage oil droplets thinner fibrils. At constant CNF/oil ratio, lowest CNF concentration 0.01 wt % gave most stable emulsion, with good toward coalescence, but not towards creaming. GGM (0.5 1.0 %) (5 oil) showed no creaming behavior, clear bimodal distribution some destabilization over storage time 1 month. Combinations oil, provided slower alone. could also improve oxidation delaying initiation lipid oxidation. Use combinations can thus away emulsions, such mayonnaise beverage

Cellulose nanofibrils for one-step stabilization of multiple emulsions (W/O/W) based on soybean oil.
Cellulose nanofibrils (CNF) were incorporated in water-in-oil (W/O) microemulsions and emulsions, as well as water-in-oil-in-water (W/O/W) multiple emulsions using soybean oil. The addition of CNF to the aqueous phase expanded the composition range to obtain W/O/W emulsions. CNF also increased the viscosity of the continuous phase and reduced the drop size both of which increased the stability ...
متن کاملCellulose fibers and nanofibrils for adhesive reinforcement
Introduction In wood industry, adhesive bonding is one of the key process steps. To ensure continuing technological progress in wood industry it is necessary to explore new possibilities of improvement in adhesive bonding. The potential routes for performance improvements suggested by a state of the art report issued by COST Action E13 Wood Adhesion and Glued Products (Dunky et al. 2002) focus ...
متن کاملSpirulina; the food for future
Spirulina is a cyanobacterial photosynthesis that is grown commercially in many tropical and subtropical countries and temperate regions for human and animal nutrition. This commercial product is used as a rich source of protein and vitamins in the pharmaceutical, food and chemical industries due to its valuable nutrients. In the last two decades, the production of microalgae for food has incre...
متن کاملLong-term stabilization of foams and emulsions with in-situ formed microparticles from hydrophobic cellulose.
We report a simple method to produce foams and emulsions of extraordinary stability by using hydrophobic cellulose microparticles, which are formed in situ by a liquid-liquid dispersion technique. The hydrophobic cellulose derivative, hypromellose phthalate (HP), was initially dissolved in water-miscible solvents such as acetone and ethanol/water mixtures. As these HP stock solutions were shear...
